Since it is not legal to import kangaroo (dead or alive)
into the USA, I was wondering if it is worth the effort to
travel to Australia and have a serving of dinkum chili.
I am sure there must be some Australian sysops in this forum
who can comment on this matter. Or at least one Kiwi who
has visited the land of Oz. For those who do not know how

I think that many of those ingredients are made up and do not actually exist.
I met a local gal who gave me what she claimed was kangaroo
jerky. It tasted more like pork to me, but she had just married
a guy from Australia (a Crocodile Dundee sort of guy) and swore
it was kangaroo. So I took her word for it, which seemed to be
a good idea at the time.
Macropod flesh is very low fat - I doubt that anyone would make a suitable bacon or ham.
Personally, I much prefer nutria. Not only is it low fat,
but it is very high in protein. Maybe I'll send in a nutria
recipe for the Fidonews so all can enjoy.
Nor do I think there is much in the way of chilli grown at Mt Isa, nor in Tasmania.
I know a gal from Tasmania. She married a local guy who is retired
military. But I have never tasted her koala chili, so cannot comment.
