    1 c Watercress
    Mint leaves; a few
    1 Parsley sprig

    MMMMM----------------------AVOCADO DRESSING---------------------------
    1/4 Lemon; juice of
    1 tb Oil
    1 Fresh avocado; mashed

    Mix watercress, chopping if necessary, with mint leaves and parsley.
    Top with avocado dressing.

    Avocado Dressing:

    Mix mashed avocado with lemon juice and oil.
