2 Chicken breasts
1 tb Vegetable oil
1 Onion; finely chopped
1 ts Fresh ginger; grated
2 cl Garlic; crushed
3 ts Lemon rind
1 ts Curry powder
1 pn Turmeric
400 ml Can coconut milk
1/4 c Peanut butter
1/4 c Water
Combine vegetable oil, chopped onion, grated ginger, and garlic and
fry for 1 minute. Add chicken breasts and remaining spices and fry
until chicken and onion are cooked.
Add remaining ingredients; stir until well blended and heated through.
