    My favourite way to do chicken and melon is to make this recipe and
    fill the seed cavity if half a muskmelon or honeydew. Itsa meal. And
    very tasty.

    Title: Thai Melon Salad
    Categories: Salads, Thai
    Yield: 4 Servings

    6 c Cantaloupe or
    - honeydew melon; cubed
    2 Cucumbers; halved lengthwise
    - and sliced
    6 tb Lime juice; freshly squeezed
    1/4 c Honey; preferably local
    1 Lime; zest of
    1/4 ts Salt
    1 Red Thai chile; diced,
    - with seeds, adjust to
    - your spice preference
    2 tb Fresh cilantro; chopped

    Making this salad is as easy as 1, 2, 3! It comes together in mere
    minutes, making it a perfect choice when you are pressed for time but
    still want something delicious and healthy.

    In a large salad bowl, gently combine the cubed melon and sliced
    cucumbers. Ensure the ingredients are evenly distributed in the bowl
    for the best presentation and flavor experience.

    In a small bowl, whisk together the lime juice, honey, lime zest, and
    salt until the honey is fully dissolved. If you desire a tangier
    dressing, add more lime juice to taste. Conversely, add more honey
    for a sweeter flavor profile.

    Pour the dressing over the melon and cucumber mixture. Add the diced
    Thai chile and chopped cilantro. Toss gently to coat. Taste and
    adjust seasoning if needed. Serve immediately, or chill for up to 2
    hours to allow the flavors to meld.

    I don't ave any Thai fruit/melon salads in stock. I do have a bunch of authentic Thai recipes that I saved from my days on the Chileheads
    mailing list. This is one of my favoourites:

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Black Pepper Pork
    Categories: Thai, Pork, Chilies, Vegetables
    Yield: 4 Servings

    385 g (10 oz) pork tenderloin;
    - sliced
    1 md White onion; thin sliced
    6 cl Garlic; minced
    1 Red bell pepper; in thin
    - strips
    2 Prik chee nu daeng chilies;
    - (Red Birdseye) chopped
    1 Thumb-sized piece Ginger; in
    - thin strips
    1/4 c Oyster sauce
    1 tb Black peppercorns
    1 tb Sugar
    1 tb Oil
    1/4 c Spring onions; chopped

    Heat oil in a wok.

    Sautee pork until slightly brown.

    Add the garlic, ginger, Thai chilies, and black pepper
    corns. Sautee until aromatic.

    Add the onions and bell peppers. Sautee until onions
    are slightly translucent.

    Add the sugar and oyster sauce and stir for a minute.

    Garnish with chopped spring onions.

    the pork.

    This morning i made a first pass at making fried mush and ate it with strawberry ghost pepper jam. Not bad. Next time around i'll cut it
    thinner and cook at a higher heat.

    Here's an unconventional melon recipe:

    Categories: Snack, Watermelon
    Yield: 1 Servings

    2 sl Watermelon;
    - sliced like toast bread
    3 sl Pickles
    1 sl Havarti cheese
    1 Drizzle hot honey
    1 Drizzle balsamic glaze
    3 Basil leaves

    Preparation time: 10 minutes

    The Viral Watermelon Sandwich recipe will have you shook. My mind was
    blown when I took that first bite and it tasted ridiculously good.
    What I thought was going to be an epic fail, turned out incredibly
    delicious!

    Cut two thin squares out of a watermelon to resemble two slices of
    bread.

    On top of one watermelon piece, add 3 pickle slices, the cheese, a
    drizzle of hot honey, balsamic glaze, and the basil leaves.

    Top with the second square slice of watermelon and enjoy!

    Since trichinosis is a thing of the past in USA I see no reason, ever,
    to substitute for pork.

    Mush, like grits, gets filed under the drywall spackle/filler heading
    at Chez Dirty. Why anyone would do that to otherwise tasty maize ....

    Title: Grilled Watermelon w/Minted Salsa Bites
    Categories: Fruits, Vegetables, Herbs, Cheese, Citrus
    Yield: 12 Servings

    2 c Diced strawberries
    2 Kiwi; peeled, quartered,
    - thin sliced
    1/4 c Chopped red onion
    1 Jalapeno; seeded, fine
    - chopped
    1 tb Chopped fresh mint
    1 tb Fresh lime juice
    3 lb Seedless watermelon
    1/2 ts Kosher salt
    1/4 ts Black pepper
    1/3 c Feta cheese crumbles

    For salsa, in a bowl combine strawberries, kiwi, red
    onion, jalapeno pepper, mint and lime juice. Cover and
    refrigerate until ready to serve.

    Set grill to direct heat over medium-high heat.

    Cut watermelon into 1" thick slices; discard ends. Place
    watermelon slices on grill rack. Grill about 2 minutes
    or until watermelon is lightly seared, turning once
    halfway through grilling.

    Remove watermelon slices from grill. Sprinkle with salt
    and pepper. Cut each slice into 6 wedges. Transfer
    wedges to a serving platter; top with salsa and cheese.

    Makes: 12 servings

    Well, i've got a bag of masa harina and i had never made fried mush
    before yesterday. I figure i will keep going until i get the hang of it
    and then try something else. I soaked the butterbeans last night to get
    ready for making that crockpot quiche. Speaking of underwhelming grits recipes...
