    Yield: 12 Servings

    Title: Cheddar-Chile Cheesecake
    Categories: Cheese, Chilies, Breads, Vegetables, Pork
    Yield: 12 Servings

    1 1/2 tb Butter; for pan
    1/4 c Toasted fine breadcrumbs
    1/4 c Fine grated cheddar cheese
    6 oz Thin sliced ham
    1 1/2 lb Cream cheese,; room temp
    12 oz Sharp Cheddar; grated
    1 c Cottage cheese
    3/4 c Chopped green onion
    4 lg Eggs
    3 tb Jalapeno; stemmed, seeded,
    - fine chopped
    2 tb Milk
    1 cl Garlic; halved

    Set oven @ 325ºF/165ºC.

    Butter a 9" springform pan.

    Mix breadcrumbs and 1/4 cup cheddar. Sprinkle mixture
    into pan, turning to coat. Refrigerate.

    Dice about half of ham; reserve remaining slices.

    Mix diced ham w/remaining ingredients in blender or
    processor until smooth.

    Pour slightly more than half of filling into your
    prepared pan.

    Top with reserved ham slices in even layer.

    Cover with remaining filling. Set pan on baking sheet.

    Bake 1 1/4 hours. Turn oven off and cool cheesecake for
    about 1 hour with door ajar.

    Transfer cheesecake to rack and remove sides of pan.

    Cool to room temperature before serving.

    I've had the sampler at The Cheesecake Factory when I lived down in the
    Atlanta area. So delicious. :Looks like they don't have the same one
    anymore, sadly. Their shepherd's pie was surprisingly good though. Min
    you, this was probably 20 years ago now.

    Yield: 1 Servings

    MMMMM---------------------------CRUST--------------------------------
    1 pk Graham crackers; powdered
    4 tb Butter
    1/8 c Brown sugar

    MMMMM-------------------------CHEESECAKE------------------------------
    32 oz Cream cheese
    1/8 c Brown sugar
    3/4 c Sugar
    1 1/8 c Sour cream
    1/4 c Flour
    1 ts Vanila
    4 Eggs; large
    1/4 ts Ginger
    1/4 ts Cinnamon
    3 Jalepenos; medium size

    MMMMM--------------------------TOPPING-------------------------------
    1/2 c Sour cream
    1/8 c Sugar
    2 Eggs; large

    Combine all crust ingredients; press into the bottom of a 10 inch
    spring form pan; bake for 10 minutes at 350f; cool Beat the cream
    cheese and sour cream until smooth; add all other cheese cake
    ingredients slowly, beating after each addition until smooth; pour
    onto crust; bake 1 hour at 225f. Combine all topping ingredients;
    whip to a froth; pour over cheesecake; bake 15 minutes at 300f. Cool
    slowly; chill before serving Garnish with whipped topping or fruit as
    desired. NOTE: It is supposed to be a little mushy when done rather
    than solid like most cheesecakes, however if you prefer a "normal"
    cheesecake raise the temp about 25 degrees and cook a little longer.
    The original recipe called for serving warmed (nuked), I like it
    chilled with "Union Grill Strawberry Sauce" on top

    The GFS item comes from Eli's. But it eapporates. I took one to work as
    my part of a pot-luck meeting and with just 5 people at the meeting it evaporated right before my eyes. And before I got a slice. Bv(=

    I s'pose it's the jalapeno that's "Crisp". Never ever had crisp cheese
    cake. Even the crust is pretty crumby. Bv)=

    Title: Blueberry Pie With Graham Cracker Crust
    Categories: Fruits, Dairy
    Yield: 6 servings

    3/4 c Sugar
    3 tb Cornstarch
    1/8 ts Salt
    1/4 c Water
    4 c Fresh blueberries; divided
    1 (9") graham cracker crust
    Whipped cream

    In a large saucepan, combine sugar, cornstarch and salt.
    Gradually add the water, stirring until smooth. Stir in
    2 cups of blueberries. Bring to a boil; cook and stir
    until thickened, 1-2 minutes. Remove from heat; cool to
    room temperature.

    Gently stir remaining blueberries into cooled blueberry
    mixture. Spoon into crust. Refrigerate, covered, until
    chilled, 1-2 hours. Serve with whipped cream.
